Spaghetti with Blistered Tomatoes & Burrata
1 lb box spaghetti
12 oz cherry tomatoes
3 cloves garlic, minced
1 tbsp olive oil
1 tspn oregano & basil
8 oz. burrata, cut in halves
1/2 cup finely grated Parmesan
1/4 cup pasta water
Salt & pepper
• Heat olive oil over medium heat, add in garlic and cook until fragrant
• Boil pot of salted water for pasta

• Add tomatoes to olive oil & garlic with oregano & basil. Season with salt & pepper and cook ~8 - 10 min. until tomatoes have blistered
• Add pasta into boiling salted water. Once pasta is al dente, strain pasta, reserving 1/4 cup of pasta water. Add water to tomatoes
• Add Parmesan and simmer until liquid has reduced by half. Season with salt & pepper
• Add cooked spaghetti to tomato sauce & coat thoroughly. Serve with burrata piece on top and fresh basil
