Basil Pesto

2 ½ ounces fresh basil

2 cloves garlic

2 tbsp toasted pine nuts

¾ cup olive oil

¾ cup freshly grated Parmesan cheese

¾ cup freshly grated Pecorino Romano cheese

•Rinse basil, remove stems, and place in food processor

​

•Toast pine nuts in toaster oven or in pan over low heat. Watch closely as they can burn very quickly

​

•Grate cheeses and add to food processor along with garlic

​

•Add pine nuts and olive oil to food processor & blend until smooth
