Fluffernutter Cookies

1 1/2 cups flour
1 tsp baking soda
1 cup peanut butter
1/2 cup butter, softened
3/4 cup brown sugar, packed
1/4 cup sugar, plus 2 tbsp for coating
1 egg
2 tsp vanilla
1 cup marshmallow Fluff



• Preheat oven to 350°
 

• In  medium bowl, whisk together flour and baking soda, set aside

• Cream together butter, peanut butter, brown sugar, and sugar until light and fluffy. Mix in egg and vanilla 

• Slowly add in flour mixture and mix until well combined

• Roll cookie dough into ~1 in. balls and place on lined cookie sheet. Using a piping bag, pipe about a pea-sized amount of Fluff into the peanut butter ball. Roll ball in sugar to coat

• Using a fork, lightly press a criss-cross pattern onto each cookie (careful not to completely flatten and squish out the fluff!)

• Bake ~10 min. Remove cookies from oven and top with another pea-sized amount of fluff in the center and pop back into oven for another ~2 min.
