Pizza

4 cups bread flour
1 1/2 tsp sugar
1 packet instant dry yeast
1 tbsp sea
 salt
1 3/4 cup warm water
3 tbsp + 2 tsp olive oil
Tomato sauce
Shredded mozzarella cheese
1 clove garlic, minced
1/4 cup grated Parmesan
1 - 2 tbsp fresh basil, chopped
1/2 tsp garlic powder

Optional toppings: pepperoni, sausage, peppers, onions, mushrooms, etc.

• In the bowl of a stand mixer, combine flour, sugar, yeast and sea salt. With mixer on low, add the water and 2 tablespoons of the oil and beat with dough hook attachment until the dough forms into a ball

• Put the dough onto a lightly floured surface and gently knead into a smooth, firm ball

• Coat a large bowl with remaining 1 tbsp olive oil. Add the dough and cover with a warm, damp kitchen towel and let rise ~ 1 hr.

• Preheat oven to 450°. Take the dough out of the bowl and put onto a lightly floured surface and divide it into 2 pieces and form into balls. Cover each again with a fresh warm, damp towel and l let them rest for 10 min.

*This recipe makes enough dough for 2 pizzas. You can make 2 pizzas or the dough will keep in the fridge for ~2 weeks or in the freezer ~ 3 months. Just be sure to wrap it well!

• Stretch out pizza dough onto baking sheet sprinkled with garlic powder. Bake "naked" dough for ~ 7min. While dough bakes, prep your toppings

• Once you have baked your "naked" dough, preheat oven to 500°. In a small bowl combine 2 tsp olive oil, minced garlic, & fresh basil. Brush the mixture around the edges of the dough to create the "crust". Top edges with grated Parmesan & a pinch of sea salt

• Add your sauce, cheese, and toppings. Bake ~7 - 10min.

**If you do not have bread flour, all purpose flour can be substituted
