Avocado Chicken Salad
3 avocados
11/2 lb cooked chicken, shredded
1/2 red onion, chopped
2 celery stalks, chopped
1 tbsp garlic aioli
1 tsp Cholula hot sauce
1 tbsp dill relish
1 tsp fresh lemon juice
1 tsp crushed red pepper
salt & pepper
Sandwich topping ideas:
tomatoes, roasted red peppers, lettuce, baby kale, american cheese, pepper jack cheese, banana peppers, etc.

• In a large bowl, mash avocados & save one of the pits
• Add in onion, celery, aioli, Cholula, relish, lemon juice, crushed red pepper, salt & pepper and mix until well combined
​
• Add in chicken until fully coated in avocado mixture
• Build your sandwich! My go-to is toasted sour dough bread with more aioli, baby kale, and roasted peppers
• Store leftover chicken salad in an airtight container with the avocado pit
*If you don't have garlic aioli on hand, you can substitute with mayo & add 1 clove minced garlic
