Blueberry Buckle
Cake:
6 tbsp butter, softened
3/4 cup sugar
1 egg
1/2 cup milk
2 tsp baking powder
2 cups flour
2 cups blueberries
1 tsp vanilla
Topping:
1/2 cup sugar
1/3 cup flour
2 tsp cinnamon
4 tbsp butter, cold & cubed
• Preheat oven to 350°
• Combine sugar, butter, egg, milk, flour and baking powder. Fold in blueberries. Pour into a greased 9x13 pan
• In a food processor or blender, combine topping ingredients: sugar, flour, cinnamon, and butter until crumbly
• Sprinkle mixture on top of cake and bake at ~35 min
* If using a smaller pan (8x8) extend baking time ~ 10-15 min.
