Blueberry Muffins
1 1/2 cups flour
1 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/2 cup milk
2 tsp vanilla extract
1 tsp cinnamon
1 1/2 cups fresh blueberries
• Preheat oven to 400°
• In large bowl whisk together flour, sugar, baking powder, salt, and cinnamon
• In separate bowl whisk together vegetable oil, egg, milk, and vanilla
• Add wet ingredients to dry ingredients and mix until just combined. Add blueberries and mix
• Divide the batter evenly between the muffin cups (in lined or greased tin) filling each about 3/4 full
• Bake ~20 min.
